Aloxe-Corton 2021 Fanny Sabre
Domaine Fanny Sabre's Aloxe-Corton is a red wine produced in the Burgundy region of France. The grapes used to make this wine come from three vineyards owned by the winery, two of which are located in the commune of Aloxe-Corton (Les Paulands and Les Cras) and one in Ladoix-Serrigny (Les Boutières).
The vineyards are cultivated according to the principles of biodynamic viticulture, with very low yields, between 30 and 35 hectoliters per hectare, to obtain very concentrated grapes. In the winery, Fanny Sabre follows a minimalist approach, with spontaneous fermentations with indigenous yeasts and long macerations to extract as much color and tannins from the skins as possible. Aging takes place in small oak barrels for 15 to 18 months.
Fanny Sabre's Aloxe-Corton is a very intense and structured wine. The nose has aromas of small red fruits such as raspberry and cherry, floral notes of violets and a touch of licorice. In the mouth it is powerful, with firm tannins that require a few years of aging to soften. The fruity sensations are accompanied by notes of flint, cocoa and a slight minerality. This is a very traditional wine, true to the Burgundy style, expressing elegance and depth.
