Michel Gahier practices natural farming, completely excluding chemicals and embracing nature's rhythms. This approach ensures impeccable grape quality, reflecting the purity of the terroir.
Harvesting is done entirely by hand, selecting only the finest bunches to preserve their integrity. Fermentation is spontaneous, relying solely on indigenous yeasts that harmonize with the must to enhance the wine’s nuances. The wine is then aged for 15 months in large, neutral oak foudres, which preserve its natural character without overshadowing it. This slow and respectful process allows "Les Crets" to develop a complex structure balanced by vibrant freshness.
