Arbois Chardonnay "Les Follasses" 2020 Michel Gahier
The Chardonnay "Les Follasses" comes from the authoritative producer Michel Gahier, located in the commune of Montigny-lès-Arsures in Arbois, in the Jura region. The Chardonnay grapes that compose it come from vineyards managed according to the principles of organic farming, with manual processes and limited yields.
The soils are mainly made up of marl, ideal for giving complexity to the Chardonnay. After a rigorous manual selection of the grapes, a slow spontaneous fermentation takes place in oak barrels with only indigenous yeasts. This is followed by 12 months of maturation in old barrels with the "ouillé" technique.
The wine has an intense straw yellow color with golden reflections. The nose reveals aromas of yellow apple, apricot and hazelnut with pleasant buttery notes. In the mouth it shows structure and warmth well balanced by a lively freshness, with a persistent finish. A great Chardonnay to pair with important fish dishes.
