The Arbois Poulsard Sur Lias 2022 by Domaine Tissot is a captivating and character-rich red wine made from Poulsard grapes grown in the vineyards of La Vasée and Le Moulin, located in the Jura region. These vineyards, covering an area of 1.2 hectares, are characterized by clay soils of Lias marl, which impart a distinctive minerality and unique aromatic depth to the wine. The vines, with an average age of 50 years, are trained using the Guyot method with a density of 7,000 vines per hectare, producing an average yield of 25 hl per hectare.
The winemaking process for this wine follows an artisanal and respectful approach to the raw material. The grapes are hand-harvested and manually destemmed. This is followed by a long maceration on the skins for three months in foudre, with spontaneous fermentation. This process allows for optimal extraction of aromas and tannins, giving the wine a complex and harmonious structure. Aging continues in the same containers for six months, without fining or filtration, and without the addition of sulfites.
