Barbaresco Starderi 2021 Olek Bondonio
Olek Bondonio's Barbaresco Starderi is is a red wine from Piedmont made from Nebbiolo grapes from a small parcel of vines over 40 years old in the cru of the same name. The Starderi vineyard is one of the most revalued in recent years for the production of Barbaresco in the commune of Neive, due to its south-west facing slopes that are sunnier and allow the production of more structured wines.
The "Starderi" Barbaresco 2021 ferments spontaneously on its skins 2 months followed by ageing for about 2 years in large casks. The 2019 Barbaresco Starderi by Olek Bondonio Rubino shows a bright ruby colour to the glass. The nose is rich and complex, with hints of ripe cherries and strawberry jam, followed by tertiary notes of liquorice, cloves and tobacco. The sip is structured, energetic but well integrated in the tannic texture, warm and of remarkable length. A wine predisposed to long ageing.

VINIFICATION: fermented with only indigenous yeasts in cement casks, it undergoes spontaneous malolactic fermentation and matures in large wooden barrels for 10 months, without any filtration at bottling.
