Barolo 2007 Fontanafredda
The Fontanafredda Barolo is an iconic symbol of Piedmontese winemaking excellence, crafted in the Langa albese region. The vineyards, located at altitudes of 300-400 meters on Miocene and Tortonian-origin soils rich in marl and limestone, enjoy optimal exposures (excluding the North), producing high-quality Nebbiolo grapes.
Harvested in early to mid-October, the grapes undergo a traditional fermentation process in stainless steel tanks with floating caps for about 15 days at 30-31 °C. Frequent pump-overs during this phase enhance the extraction of color and tannins. Afterward, the must remains in contact with the skins for a few more days to optimize the extraction of polyphenolic substances and prepare for malolactic fermentation.
Aging occurs in large oak barrels from Slavonia and Central France for at least two years, followed by a further refinement in bottle for at least 8 months. This extended process develops the wine's complexity, elegance, and aging potential.
In the glass, Barolo reveals a ruby red color with garnet hues that evolve to orange with age. The nose offers a broad and distinctive bouquet with notes of dried flowers, spices, dry leaves, and forest floor. On the palate, it stands out for its robust and full-bodied structure, making it capable of aging beautifully over the years.
This Barolo pairs exceptionally well with red meat dishes, including roasts and braised meats, as well as medium to long-aged cheeses. It is also a perfect choice for moments of relaxation, perhaps while enjoying a pleasant post-meal conversation.
