The greatest wine from Burlotto is the magical Barolo of the Monvigliero di Verduno vineyard. The greatness of Monvigliero lies in its distinctive aromas, which do not resemble any Barolo we have ever seen. Its surprisingly intense and immediately recognizable scent of black Provencal olives, cedar and truffle is nothing short of hypnotic. And it could not come from anywhere else on earth. It is the essence of his terroir.
Like his ancestors, Fabio approaches Monvigliero in a way that is both classic and idiosyncratic - to extract the essential greatness of the vineyard. At the center of this technique is a light crushing of all the grapes on foot, an incredible 60-day maceration on the skins and, naturally, a long aging in large wooden barrels. It is a practically unprecedented approach today, yet its splendor is revealed in every glass of this unique Barolo.
In fact, Monvigliero's magic must have much to do with the technique as with the relatively high altitude of the vineyard or with the vines of 45 years in the soil rich in limestone.
The crushing with the feet avoids the problem of mechanical extraction: break the seeds and tannins, which cause bitterness. It also explains how the fruit of Monvigliero can withstand sixty days of skin contact - a practice that once prospered in the largest wineries of the Langhe but disappeared in the 80s. A wine with a powerful structure, but with a delicately ethereal sensation on the palate.
