Barolo Unoperuno 2017 Elio Altare
Barolo Unoperuno 2017 is a fine wine from Piedmont produced by Elio Altare. It is a blend of grapes from the different vineyards owned by the estate and leased such as Arborina (La Morra), Cannubi (Barolo), Cerretta (Serralunga), Pernanno (Castiglione Falletto), Sarmassa (Barolo). It is a project born in a very difficult year in which most of the grapes were damaged by hail and rain, so Altare decided to de-stem by hand to extract only the few healthy grapes left.
From that moment on it was decided to destemmed the grapes by hand, in order to maximise the purity of the fruit in the maceration process, making sure that there were no stalks, petioles, leaves, damaged berries, unwanted insects or any foreign part of the fruit. Nebbiolo is very difficult to de-stem perfectly because the stems and petioles are naturally fragile and no matter how high-tech and expensive the crusher-destemmer is, it is never as precise as a man's manual work. The name was finally born with the first official release in 2011: UNOPERUNO, precisely because the grapes are destemmed one by one.
Over the years we have been able to perfect the work and speed up the time taken to produce it, but the aim has always been to obtain a silky Barolo characterised by great elegance and fine-grained tannins, sweet, perfumed and ethereal but still intensely aromatic, of juicy red cherries, spices and wild flowers.

VINIFICATION: Maceration on the skins in rotary fermentors at controlled temperature for 3-4 days and spontaneous fermentation, ageing for 24 months in used French oak barriques.
