Vinification of Beaujolais "Les Tours" follows traditional Beaujolais techniques, with semi-carbonic maceration of whole grapes for about 12 to 15 days. Fermentation takes place in temperature-controlled concrete tanks, without the addition of selected yeasts. After fermentation, the wine is aged for about 8 months in wooden barrels of various sizes to give it structure and aromatic complexity.
Justin Dutraive's Beaujolais "Les Tours" is a medium red wine, characterized by an intense and lively ruby color. On the nose, there are aromas of ripe red fruits, such as cherries and strawberries, accompanied by floral and spicy notes. In the mouth, the wine is fresh, savory and very aromatic, with soft tannins and good acidity. The finish is long and pleasantly fruity.
Beaujolais "Les Tours" is considered one of the best examples of high quality Beaujolais, which best expresses the characteristics of the Fleurie terroir.
