All Pataille wines are produced in total respect of grape growing and natural winemaking techniques, without the addition of handling chemicals, in order to produce a Burgundy wine capable of expressing, of course, the incredible terroir of belonging.

Bourgogne Aligotè 2018 Sylvain Pataille

Bourgogne Aligotè 2018 is a natural wine produced by Sylvain Pataille. Pataille is our opinion one of the best vigneron of Burgundy and this Aligoté is once again an incredible confirmation: it comes from vineyards over 50 years of age, 60% of the grapes come from Champ Forey (limestone and gravel) and 40 % from Auvonnes (clay, marl soil with small stones) Organic certification, biodynamic methods. Natural yeasts, minimal amount of sulfur added in the bottle. Straw yellow in color with golden accents on the edges, the nose is pure sea with balances and hints of white peach. In the mouth the wine is super vertical, but ample, fruity the right, beautiful length on the finish. Ideal as an aperitif.

Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
