Bourgogne Aligoté 2019 Pierre Morey
Bourgogne Aligoté is a white wine from Burgundy made from the grape of the same name by Pierre Morey, one of the greatest white wine makers on the Côte d'Or. The Aligoté grape, characteristic of Burgundy, comes from a spontaneous cross between Pinot and Gouais Blanc, and comes from vineyards over 50 years old owned by the Domaine in the commune of Meursault.
Following the production philosophy of the entire Domaine, the Bourgogne Aligoté is produced according to the principles of biodynamic agriculture, with minimal intervention in the vineyard and in the cellar: after soft pressing, fermentation takes place spontaneously with indigenous yeasts in cement vats. After malolactic fermentation, 80% of the wine is aged in cement vats and the rest in oak barrels.
Aligoté Morey is a pale straw yellow in the glass, accompanied by aromas of fruit and white flowers. In the mouth it is soft with a pleasant and elegant freshness that anticipates a medium-long finish rich in sapidity.

VINIFICATION: Soft pressing, static decantation, spontaneous alcoholic fermentation with indigenous yeasts in vitrified cement vats and malolactic fermentation in oak barrels, ageing for 12 months in 80% vitrified cement vats and 20% in small oak casks.
