The Aligoté grapes are cultivated by Pierre Morey in the parcels of his Domaine located in the prestigious commune of Meursault. The vineyards, with an average age of about 50 years, are planted on deep calcareous-clay soils, ideal for enhancing the wine's mineral qualities. Pierre Morey employs biodynamic farming principles, respecting the natural cycle of the plants and soil, thus ensuring sustainable and high-quality production.
The vinification of the Bourgogne Aligoté 2022 begins with a gentle pressing of the grapes followed by a static decantation of the must. Fermentation occurs spontaneously thanks to the indigenous yeasts within glazed cement vats. Subsequently, the wine undergoes malolactic fermentation, which softens the natural acidity of the wine, and matures for 12 months: 80% in cement tanks and 20% in French oak barrels. This aging process imparts a balanced aromatic complexity to the wine, complemented by an elegant structure.
Visually, the Bourgogne Aligoté 2022 presents a pale straw yellow color with brilliant reflections. On the nose, the wine is elegant and delicate, with an expressive bouquet of white flowers, fresh fruit, and hints of honey. On the palate, the wine is smooth and harmonious, with lively freshness and evident minerality. The sip is balanced, with good final persistence and a savory aftertaste that adds depth and complexity to the tasting experience.
The Bourgogne Aligoté 2022 is a versatile wine that pairs perfectly with fish dishes, shellfish, and seafood. Thanks to its freshness and immediacy, it is ideal for accompanying simpler and less structured dishes compared to the great Chardonnays. It is also excellent as an aperitif, enhancing delicate and refined flavors.
