Bourgogne Aligotè Champ Forey 2019 Sylvain Pataille
The 2019 Bourgogne Aligotè Champ Forey is another interesting version of pure Aligotè produced by Sylvain Pataille. This fine white wine is made from old Aligotè vines planted between 1932 and 1961 that come from the Champ Forey vineyard, gravel and limestone soils and an eastern exposure.
The grapes are harvested by hand and pressed in vertical presses, after which the must ferments on its lees spontaneously with indigenous yeasts and matures in steel and old barrels for about a year.
The Bourgogne Aligotè "Champ Forey" 2020 shows a pale straw yellow colour in the glass, while the nose revolves around hints of citrus and yellow fruit. The sip is taut, savoury and drinkable.
