Bourgogne Aligotè "Les Auvonnes" au Pépé 2020 Sylvain Pataille
Sylvain Pataille likes Aligotè very much: almost out of a spirit of revenge in wanting to change the fortunes of this grape variety commonly considered to be the younger brother of Chardonnay, the Marsannay master Pataille is able to give us very interesting versions of this grape variety in purity. The Bourgogne Aligotè 'Les Auvonnes au Pépé' 2020 is a fine white wine from authentic Burgundy, which tastes of the peasant soul.
The grapes come from approximately 50-year-old old vines at an altitude of 250 m, on soil composed of clay, marl and limestone. Pataille uses sustainable methods to care for his vineyard, even though he is no longer certified organic since 2016, finding himself forced to use treatments to save his harvest. This natural wine ferments spontaneously with indigenous yeasts and is aged for 12 months in old barrels.
The colour of the Bourgogne Aligotè "Les Auvonnes au Pépé" 2020 is straw yellow, the nose is composed of fruity and citrus scents together with light toasted and smoky notes. On the palate, this white wine is different from the other types of Aligotè, characterised by a beautiful freshness but also knows a certain amount of complexity.
