Bourgogne Blanc 2021 Domaine Fanny Sabre
Domaine Fanny Sabre's Bourgogne Blanc comes from estate vineyards located in the communes of Meursault, Puligny-Montrachet and Chassagne-Montrachet. The grapes used are 100% Chardonnay.
The same biodynamic viticultural techniques are also applied for the Bourgogne Blanc as for Fanny Sabre's other vineyards, with very low yields, around 35 hectoliters per hectare, to obtain very concentrated grapes. In the winery, after light pressing, the must ferments spontaneously in oak barrels. Malolactic fermentation is carried out only partially, to preserve good acidity in the wine. Aging lasts 10-12 months in old oak barrels.
Fanny Sabre's Bourgogne Blanc is a wine of great freshness and elegance. The nose has aromas of green apple, citrus fruit such as grapefruit, white flowers and a slight mineral note. In the mouth it is taut and savory, with good concentration balanced by a marked acidity. The fruity sensations are accompanied by hints of aromatic herbs such as thyme and sage. It is a very savory and vertical wine, true to Burgundy Chardonnay, with a long aromatic persistence. An excellent value for money.
