Bourgogne Blanc Cuvee Les Terroirs de Daix 2020 Thierry Mortet
Bourgogne Blanc Cuvee Les Terroirs de Daix is a white wine from Burgundy produced by Thierry Mortet. The Chardonnay grapes come from the village of Daix, north of Dijon, where the domaine owns 5 hectares under vine in addition to those owned in Gevrey Chambertin. The terroir is a mixture of calcareous clay with clay and fine marl, the vines are between 15 and 35 years old and Mortet has been following organic farming principles since 2010 even though chemical weeding was abolished in 1995. The grapes are harvested by hand, fermentation is spontaneous with indigenous yeasts, then the wine is aged in barrels with weekly batonnage until January before bottling. The Bourgogne Blanc "Les Terroirs de Daix", shows an intense straw colour tending to gold. The nose expresses floral, citrus and herbal aromas such as sage. The sip is drinkable, with good freshness and sapidity.
