Bourgogne Hautes Côtes de Beaune 2019 Dandelion
Dandelion's Bourgogne Hautes Côtes de Beaune comes from the appellation of the same name located in the higher hinterland of the Côte de Beaune.
Pinot Noir grapes are grown on steep, windy slopes, with limestone-clay soils rich in skeleton, between 300 and 400m above sea level. This confers acidity and flavor. The yield is 55hl/ha. After destemming and crushing, fermentation takes place in steel with 12-day maceration with pumping over. This is followed by aging in steel tanks and oak barrels for 8 months. The wine has a brilliant ruby red color. On the nose aromas of cherry, raspberry and violet.
In the mouth it is fruity and fresh, with soft tannins and savory finish. A versatile wine, suitable with cured meats, hard cheeses and rustic dishes.
