The Bourgogne Hautes-Côtes de Beaune "Clou 377" 2021 by Domaine Boris Champy is a vinous masterpiece originating from our "Au Clou" plot in Nantoux. Mention of the altitude of 377 meters and the name of the lieu-dit "Au Clou" appear on the label, attesting to the authenticity of the terroir. The soil of this plot is characterized by a predominance of white marl and stoniness, with a high marl content. Despite the appearance of extreme poverty due to numerous stones, the marly-clay soil ensures excellent water retention, imparting extraordinary strength and vitality to the vineyard. Our ambition is for this terroir to be recognized as the most renowned climat in the Hautes Côtes de Beaune.
In the vineyard, we follow a traditional approach with low vine density per hectare, 10,000 vines, and Guyot pruning. Harvesting is strictly manual, ensuring perfect grape ripeness before picking.
In the cellar, utmost care and attention to quality are paramount. During vinification, we employ gentle extraction with a high proportion of whole clusters (80% to 100%), in wooden fermenters. Aging takes place in oak barrels for 12 months, imparting extraordinary structure and complexity to the wine.
Upon tasting, the Bourgogne Hautes-Côtes de Beaune "Clou 377" 2021 exudes fresh notes of black fruit on the nose. On the palate, it reveals power and smoothness, underscored by a touch of fresh minerality. The terroir effect is evident in the high quality of the taste profile of this fine Burgundy. Perfectly paired with stewed meats (classic boeuf bourguignon), grilled duck breast, or rack of lamb. Ideal for cellar aging, with a potential to age for 8-15 years.
