Hailing from the 2022 harvest, this oenological gem embodies the passion and commitment of Domaine Didon, established in Bouzeron in 2017, boasting 2 hectares of owned vineyards and a biodynamic approach.

The grapes, exclusively of the Pinot Noir variety, are cultivated using organic and biodynamic farming practices, reflecting the vineyard's deep reverence for nature and the land. The 70-year-old vines thrive in clay-limestone soils at an altitude of 380 meters, with an eastward orientation contributing to the wine's complexity and elegance.

Vineyard management follows the Guyot system, with a planting density of 10,000 feet per hectare, ensuring controlled production and limited yields of 35 hl/ha. This allows the grapes to express themselves fully in terms of quality rather than quantity. Manual harvesting underscores the meticulous attention given to each cluster, ensuring precise grape selection.

The vinification of Bourgogne Pinot Noir from Domaine Didon is characterized by a delicate and fruit-respecting approach. Whole clusters are used, with short macerations aimed at extracting the best from the fruit while developing a soft and velvety tannic structure. Domaine Didon is the story of a new generation of winemakers, guided by tradition and driven by innovation, where David and Naïma Didon fulfill their dream of cultivating a biodynamic vineyard of 2 hectares in Chassey-le-Camp, Côte Challonaise. Here, amidst clay-limestone soils, 'Vignes Blanches,' a historic lieu-dit in Bouzeron, comes to life. This small AOC is the stage for Pinot Noir, Aligoté, and Pinot Blanc planted between 1947 and 1960.

David, a seasoned viticulturist with a decade of experience in Volnay, and Naïma, in 2017, brought forth a unique experience. Biodynamic in approach, their vineyard practices translate into a wine that speaks of the land and the hands that tend to it. In the cellar, nature guides choices, with fermentations in amphorae, barrels, and fiberglass, and a rest on lees before bottling.
