Brain de Folie “Chenin” Domaine du Mortier
Domaine du Mortier's Brain de Folie “Chenin” is a dry white wine made exclusively from Chenin Blanc grapes grown in the experimental agroforestry project in Brain sur Allonnes. The vines, planted among shrubs and trees, benefit from an extraordinary biodiversity that promotes a balanced ecosystem and natural defense against pests and diseases.
Harvesting is done manually in several successive steps to select only perfectly ripe bunches, given the uneven ripeness of Chenin. After harvest, the grapes are gently pneumatically pressed and the must is left to decant cold for 48 hours. Fermentation occurs spontaneously in 1125-liter cuve ovoïde, without the addition of yeast or other additives. Aging continues for 6 months in these cuves, which promote natural micro-oxygenation, enriching the wine's aromatic complexity.
Brain de Folie “Chenin” stands out for its complexity and roundness in the mouth. On the nose, it offers a rich bouquet of white fruit, flowers and slight mineral notes. On the palate, the structure is elegant and well balanced, with a pleasant freshness that enhances the fruity flavors and a slight savory note on the finish. The wine is bottled without clarification or filtration, with minimal addition of sulfur, to preserve as much as possible the purity and authenticity of the terroir.
