Brain de Folie "Pétillant Naturel" Domaine du Mortier
Domaine du Mortier's Brain de Folie “Pétillant Naturel” is a natural sparkling wine made by brothers Cyril and Fabien Boisard from a unique blend of Grolleau Gris (40%), Chenin Blanc (30%) and Pineau d'Aunis (30%) grapes. The vines are located in the experimental agroforestry project in Brain-sur-Allonnes, where the biodiversity of the plants and surrounding fauna create an ideal environment for healthy and sustainable viticulture.
Harvesting is done manually, carefully selecting the grapes to ensure quality. After harvest, the grapes are gently pressed and the must is provisionally bottled before alcoholic fermentation is completed. This process allows the wine to continue fermenting naturally in the bottle for a period of 8 to 18 months, developing a fine and persistent carbonation.
Dégorgement is performed to clarify the wine and remove fermentation residues, without adding anything but the wine itself. This traditional method preserves the integrity of the product, offering an authentic and natural sparkling wine.
Brain de Folie “Pétillant Naturel” presents a fine and lively bubble, with an aromatic profile that combines the fruity freshness of Chenin, the aromatic and spicy notes of Grolleau Gris, and the more robust and vinous character of Pineau d'Aunis. On the palate, it proves fresh, lively and complex, perfect for accompanying aperitifs and convivial moments.
