The white wine
The white wine has ancient origins, it has been the protagonist of the table for millennia! It is obtained from the vinification of musts that takes place without maceration of the skins, except in special cases, which is why it is also possible to obtain white wines from black grape varieties. Without contact with the skins, there is no extraction of substances such as those that give color and tannins, which is why white wines are usually lighter and less structured than red wines, but also more sensitive and endowed with less polyphenolic substances beneficial for our body. Equipped with good acidity, white wines, from the simplest to the most complex to aromatic grape varieties, are perfect with hors d'oeuvres, fish and white meat dishes and medium-aged cheeses.
