Excellent Chablis 1er Cru produced by Maison Dauvissaut in the prestigious La Forest vineyard. Chardonnay from calcareous-kimmeric soils, perfect for minerality and longevity. After soft pressing and fermentation in steel, it ages on the lees for 12 months. Straw yellow, citrus and mineral hints. Slender, taut and elegant mouth with a saline finish. Superb with seafood, crustaceans and noble fish.

Chablis 1er Cru La Forest 2017 Dauvissaut

The refined Chablis 1er Cru "La Forest" 2017 comes to us from the renowned Maison Dauvissaut, located in the homonymous village. The Chardonnay grapes come from the historic La Forest vineyard, one of the Grand Crus of the area.

The terroir is characterized by calcareous-kimmeric soils, ideal for giving the wine elegance, minerality and aging potential. After a soft pressing, the must is fermented in steel with selected yeasts. This is followed by aging on the fine lees for 12 months.

The wine has a beautiful bright straw yellow. On the nose citrus and mineral aromas with iodized notes. On the palate it is slender and elegant, with a tense acidity and a persistent finish with saline returns. A great Chablis from shellfish, seafood and fine fish.

The Domaine Dauvissat is considered one of the two fathers of Chablis wines together with the former Domaine Ravaneau, thanks to wines with an unmistakable style, with a superior technique and absolute purity. 

Since 2002, Domaine Dauvissat has been working in biodynamic agriculture, the natural wines of Dauvissat are born spontaneous fermentations, without clarification and batonnage. The vinification and subsequent maturation of the Chablis Dauvissat wines takes place according to tradition in steel and for a small part in wood, without ever exceeding, there is in fact no trace of wood on tasting.

Domaine Dauvissat has 14 hectares of which 2.70ha of Chablis Grand Cru for an average production of 80,000 bottles.

The Chablis Dauvissat are wines already enjoyable in their youth with a full and elegant juice but with almost infinite aging capacity, given the size of the Domaine, unfortunately the bottles are subject to speculation and are in fact unobtainable in the market.
