Chablis 1er Cru "Montee de Tonnerre" 2018 Droin
The 2018 Chablis 1er Cru "Montee de Tonnere" is made from grapes grown on the very fine vineyard of the same name, which stretches from the town of Auxerre to the town of Tonnere, where the ascent (Montée) of the hill begins. The wines of this 1er Cru can be compared in intensity and longevity to the Grand Crus of the estate: This is an elegant and refined Chardonnay, made with extreme care to obtain the highest quality from the grapes.
After fermentation, the wine is aged in wood for a period of 8-10 months, thus enhancing the aromatic component and the complexity of scents and flavours. The result is a fascinating white wine with mineral and delicately fruity aromas, with notes of fruit and white flowers in the background. It is a wine with a great predisposition for ageing, and after a few years the fruity notes turn into fascinating mineral hints.

WINE-MAKING: Crushing through a pneumatic press, the alcoholic fermentation takes place spontaneously with indigenous yeasts for a fortnight, followed by malolactic fermentation in barrels. Maturation takes place in old oak barrels of which a very small percentage are new barrels, for 8-10 months.
