The Chablis 1er Cru Vau de Vey 2019 from Domaine Jeremy Arnaud is a sublime expression of Chardonnay cultivated on steep limestone slopes. In the cellar, a natural approach prevails, with gentle pressing and spontaneous fermentation. The pre-oxidation period, without the use of sulfites, prepares the must for a balanced alcoholic fermentation. After a brief sulfiting, the wine rests in cold storage, followed by maturation in stainless steel tanks and wooden barrels. Only 10% of the barrels are new, preserving the purity of the fruit.
The result is an elegant Chablis with notes of white fruit, apple, and warmer nuances, enriched by minerals and chalk.
