Chablis 2019 Droin
This is the basic label for the white wines of Chablis produced by the renowned Droin winery, which has been producing wine for over five centuries and has made Chablis history. On 6 May 1866, Emperor Napoleon III, on a visit to Auxerre, received a few bottles of his wine from Jean-Baptiste Droin.
Napoleon thanked him by giving him a silver tastevin engraved with the symbols of the Empire. That precious gift is still kept by the Droin family today. This Chablis fully expresses the soul of the terroir from which it comes through its marked freshness and minerality, which combine with an elegant aromatic bouquet.
Like all Chablis wines, this entry-level Droin wine is also endowed with a great predisposition to ageing, although it remains pleasant to drink even in its early years. In its youth it expresses lively aromas of citrus and flint, which become much more powerful with notes of flint and undergrowth as time passes. In great vintages it ages for over 10 years.

GRAPES: 100% Chardonnay
VINIFICATION: pneumatic pressing, fermentation with indigenous yeasts partly in stainless steel tanks and partly in barriques, malolactic fermentation then blending after 8-10 months. Ageing if necessary, light filtration and bottling.
