Chablis Vent d'Ange 2019 Domaine Pattes Loup

The Chablis Vent d'Ange from Domaine Pattes Loup embodies the authentic expression of Chardonnay. The vineyards, located in the lieux-dits Ménardes and Malentes near Courgis, boast an average age of 35-40 years and thrive in soils rich in marl. Thomas Pico, a talented vigneron, practices respectful winemaking, crafting this Chablis through spontaneous fermentations with indigenous yeasts and minimal sulfur.

For this cuvée, Pico opted for a completely natural fermentation, followed by a 36-month maturation in stainless steel tanks and large oak barrels. The wines undergo no filtration or clarification, with a minimal use of sulfur. The vintage characteristics contribute complexity, depth, and significant structure to the wine.

Aromas of citrus, apricots, floral and vegetal hints, and iodine notes intertwine on the nose. On the palate, the wine is full-bodied, featuring lively acidity and remarkable intensity, while the finish is long and mineral.
