Chambertin Grand Cru from Domaine Pierre Damoy represents the pinnacle of winemaking art in the renowned Gevrey-Chambertin region, located in northern Burgundy. This exceptional wine is produced exclusively from selected Pinot Noir grapes from the prestigious Chambertin Grand Cru appellation.
The Chambertin vineyards are located on a unique terroir, characterized by clay-limestone soils with a significant presence of limestone and marl. This geological combination gives the wine extraordinary complexity and unparalleled depth. The vines, which are between 40 and 80 years old, are cultivated with great attention to respect for the environment and natural balance. The use of sustainable agricultural practices, the limitation of phytosanitary treatments and selective manual harvesting contribute to obtaining grapes of the highest quality.
The vinification of the Chambertin Grand Cru is carried out with great skill and dedication. After careful destemming, the grapes undergo a long cold maceration to optimally extract the aromas and noble tannins present in the skin. Fermentation occurs with the use of indigenous yeasts, which enhance the unique characteristics of the terroir. The wine is then aged in oak barrels, part of which is new, for a period of 18-24 months, during which a slow evolution takes place which gives the wine an elegant structure and extraordinary complexity.
