Adonis Annua is composed of 70% Chardonnay from the 2017 harvest and 30% reserve wines, creating a perfect balance between freshness and complexity. The grapes come from the vineyards of Congy and Coizard-Joches, two terroirs that impart unique and distinctive characteristics to this Champagne.
The production of this Champagne follows traditional methods, with gentle pressing of the grapes to preserve the purity of the must. Fermentation takes place in stainless steel tanks to maintain freshness and integrity of the aromas. The Champagne is aged on lees for at least 24 months, during which it develops its aromatic complexity and refined structure.
In the glass, Adonis Annua presents a brilliant straw-yellow color with fine and persistent bubbles. The nose offers an elegant bouquet of white flowers, citrus, and mineral notes, accompanied by hints of ripe fruit and almond.
