Champagne Adonis Annua by Maison Clément & Fils is an elegant and rare expression of the terroirs of Congy and Coizard-Joches. It is named after the Adonis Annua, an extraordinary plant that has reappeared in the vineyards of the Maison thanks to their respect for biodiversity and soil care. Like this plant, the cuvée is rare and timeless, reflecting the Maison's commitment to sustainability and harmony with nature.

Adonis Annua is composed of 70% Chardonnay from the 2017 harvest and 30% reserve wines, creating a perfect balance between freshness and complexity. The grapes come from the vineyards of Congy and Coizard-Joches, two terroirs that impart unique and distinctive characteristics to this Champagne.

The production of this Champagne follows traditional methods, with gentle pressing of the grapes to preserve the purity of the must. Fermentation takes place in stainless steel tanks to maintain freshness and integrity of the aromas. The Champagne is aged on lees for at least 24 months, during which it develops its aromatic complexity and refined structure.

In the glass, Adonis Annua presents a brilliant straw-yellow color with fine and persistent bubbles. Founded in 1958 by Henri Brulfert, who began producing champagne from his own vineyards at the age of 51, the winery was later passed down to his daughters and subsequently to his grandsons, Robert and Serge Clément.
