Champagne Le Mesnil-sur-Oger Pierre Peters
Champagne Le Mesnil-sur-Oger is a fine wine produced by Pierre Peters. The chalky nature of the soil from which the grapes come, together with good water drainage allow the vines to grow in an excellent manner. Mesnil-sur-Orger is a small village just a few kilometres from Épernay, the heart of the Côte des Blancs.
This Blancs de Blancs means that this champagne, with the AOC designation Champagne Grand Cru Blanc de Blancs Brut, is made from only white grapes, particularly Chardonnay. The grapes are harvested by hand to allow the bunches to remain intact until their arrival in the cellar. This is followed by soft pressing at a controlled temperature, which preserves the characteristic aromas and flavours of the variety.
Fermentation, also at controlled temperature, continues until the end of malolactic fermentation. The wine is then left to rest on the lees for about 4 years. At the end of this long process, the wine is disgorged and the sugars are dosed to obtain the Brut type.
