Champagne "Jossias" 2015 Cazé-Thibaut
The Champagne "Jossias" 2015 from Cazé-Thibaut represents the culmination of a long tradition spanning over ten generations. Today, Fabien continues the family's ancient savoir-faire, being part of a new generation determined to create champagne that faithfully reflects its terroir. The grapes used for this champagne are exclusively sourced from Pinot Noir, cultivated in the Marne Valley on the right bank in Vandières.
The production philosophy is grounded in a love for wine, respect for the terroir, and the joy of receiving and savoring exquisite champagne. Vine cultivation abstains from herbicides or insecticides, with special attention given to manual harvesting.
Limited to 5-6 pièces per year, the production attests to a commitment to quality. The mise phase is carried out without fining or filtration, with a natural cold passage. The dosage, a well-guarded secret, contributes to defining the unique personality of this champagne. Dégorgement, carefully executed in February, completes the process, bestowing upon the "Jossias" 2015 an extraordinary expression of its terroir. After a prolonged aging on fine lees for a period ranging from 24 to 72 months, the cuvée reveals itself with a golden color and a pleasant effervescence.
The aromatic bouquet ranges from notes of white flowers to plums and citrus. The palate is delightful and perfectly balanced, with a hint of minerality leading to an elegant finish.
