The grapes are sourced from a single parcel with a sunlit western exposure and Kimmeridgian soils akin to those of Chablis, imparting a distinctive minerality to the wine. The vineyard is farmed organically, certified by Ecocert, with hand-harvested grapes and meticulous selection. Gentle pressing precedes spontaneous fermentation with indigenous yeasts in stainless steel tanks at controlled temperatures. The secondary fermentation occurs in the bottle using the traditional Champenoise method, followed by 24 months of aging on lees before disgorgement, without dosage.
In the glass, "Austral" showcases a radiant straw-yellow color with fine, persistent bubbles. The nose offers a sophisticated bouquet of lemon zest, ripe citrus, apple, peach, and subtle hints of bread crust, biscuits, and dried fruits.
