The Brut Nature Champagne “Les Semblables – Boréal” by Maison Clandestin is a Blanc de Noirs that captures the purity and authenticity of the Côte des Bar terroir. Created through the collaboration of Bertrand Gautherot, founder of the iconic Vouette et Sorbée, and Benoît Doussot, a talented Burgundian winemaker, Boréal celebrates the unique potential of the historic parcels in Buxières-sur-Arce, an underappreciated area of Champagne.
The Pinot Noir grapes are organically farmed on Kimmeridgian limestone soils with a western exposure. Harvested by hand to ensure optimal quality, the grapes are delicately pressed, and the must undergoes spontaneous fermentation with indigenous yeasts in French oak barrels, where it rests on fine lees for several months. Secondary fermentation occurs in the bottle following the traditional Champenoise method, with at least 24 months of aging on lees. The wine is disgorged without dosage, preserving its fresh and natural character.
In the glass, “Boréal” displays a brilliant straw-yellow color with a fine and persistent mousse. The nose reveals vibrant aromas of citrus and marine notes, complemented by delicate floral hints. On the palate, it delivers vibrant freshness, pronounced minerality, and a long, sapid finish that underscores its elegance.
