Champagne Rare 2008 Piper-Heidsieck
Piper-Heidsieck's Champagne Rare 2008 is made with grapes from the region's best vineyards, located in the Côte des Blancs and Montagne de Reims. The maison's cultivation philosophy is based on the utmost attention to grape quality through careful and scrupulous vineyard management. The winemaking techniques used for Champagne Rare 2008 are among the most refined and sophisticated in the wine world. Grapes are hand-picked and carefully selected to ensure the highest quality. Fermentation takes place in small wooden vats, where the must ferments naturally due to the presence of indigenous yeasts. Next, the wine is bottled for refermentation in the bottle, following the champenoise method, which involves the addition of sugar and yeast to obtain the characteristic champagne mousse. The wine is then left to rest in the maison's cellars for at least 9 years before being marketed.
Champagne Rare 2008 is deep straw yellow in color with golden highlights. The nose opens with aromas of ripe fruit, such as peach and pineapple, accompanied by floral notes of white flowers and citrus. In the mouth it is a wine of great complexity and finesse, with a creamy mousse and very fine perlage. The palate is dominated by notes of dried fruit and citrus, which blend harmoniously with the wine's savoriness and acidity. The aftertaste is long and lingering, with notes of yeast and toast that meld into a pleasant sensation of balance and harmony.
