The cuvée of this champagne is composed of a selection of Pinot Noir and Chardonnay grapes from vineyards located in the Champagne region. Specifically, the grapes used to make this wine come from high-quality vineyards located in the Montagne de Reims and the Côte des Blancs.
The winemaking techniques used to produce Champagne Dom Perignon 1996 are rigorous and artisanal. After harvest, the grapes are gently pressed to extract only the highest quality must. Next, the must ferments in small wooden vats, following the traditional techniques used by the Moët & Chandon maison.
After fermentation, the wine undergoes a slow maturation on the lees for about 8-10 years before being degorged and marketed. This aging process gives the wine a unique aromatic complexity, with notes of ripe fruit, citrus, flowers and a delicate hint of toastiness.
Champagne Dom Perignon 1996 has a deep golden color and fine, persistent perlage. The nose reveals notes of dried fruit, honey, citrus and a delicate hint of spice, while in the mouth it is creamy, elegant and enveloping, with great acidity that perfectly balances the sweetness of the fruit and the toasty note derived from the long aging on yeasts. The finish is long and persistent, with a return of dried fruit and spice notes.
