Champagne Dom Perignon 2012 Moet & Chandon
Dom Perignon is the most famous Champagne in the world, a symbol of luxury, elegance and prestige it owes its name to the Benedictine monk Dom Pierre Perignon to whom the legend attributes the birth of modern Champagne. Its history began in 1936, when the president, Robert-Jean de Vogue, decided to create a bottle of Champagne unique in the world by creating a cuvée with the grapes of the 1921 vintage, since then Dom Perignon has become a vintage Champagne which is produced only in the best vintages.
Grapes are cultivated in the Grand Cru vineyards of the Maison and in the Premier Cru lands of Hautvillers Abbey. Base wines are vinified in steel tanks before being blended and starting the second fermentation on yeasts followed by an aging of at least 6 years.
Dom Perignon 2012 amazes immediately with its hint of tropical fruits such as green mango, melon and pineapple which are followed by more temperate notes: the tingling of an orange peel, the mist of a tangerine. On the palate, the wine quickly reveals its full, rich, intense character. An interesting ripeness and tactile sensation follow the aromatic experience. On the palate the matter takes body, generous, decisive, controlled. Then it strengthens, making the wine vibrate on spicy and peppery notes.
The energy is prolonged, until a magnificent saline finish.
The wine breathes and its freshness is revealed. Flowering after the rain. A tactile sensation of peony, jasmine and lilac.
