The Champagne "La Closerie Les Béguines" by Jérome Prévost is an outstanding expression of Pinot Meunier, with extraordinary intensity and personality, characterized by exquisite depth and pleasant salinity. In appearance, it stands out with its bright straw yellow color, accompanied by a fine and persistent perlage.
The olfactory bouquet is broad and energetic, with intense and crisp notes of white and yellow fleshed fruits, lemon, yeast, pastry, and brioche, enriched by spicy and balsamic nuances.
On the palate, it opens with power, creaminess, and consistency, evolving towards an enveloping and increasingly complex taste, guided by a tense and exhilarating minerality, culminating in impeccable calm and grace with hints of saline and dried fruits.
This rarity is born in Gueux, in the Montagne de Reims, through artisanal and biodynamic methods. Spontaneous fermentation takes place in French oak barrels with indigenous yeasts, followed by wood aging before the creation of the cuvée. Finally, after at least 24 months of bottle aging on the lees, disgorging occurs with a very low sugar dosage.
