Champagne La Cave non dosé by Tristan Hyest is a high-quality cuvée, produced in the Champagne region of France. The name 'La Cave' refers to the cellar in which the wine is aged.
The grapes used to produce this champagne come from the sub-region of the Vallée de la Marne, in particular from the Aÿ area. The grape variety used in this wine is mainly Pinot Meunier, accompanied by Chardonnay and Pinot Noir. This combination of grapes gives the wine a unique structure and balance.
The winemaking techniques used to produce Tristan Hyest's Champagne La Cave non dose are rigorous and traditional. The grapes are harvested by hand and carefully selected to ensure maximum quality. After pressing, the must is fermented in oak barrels and undergoes a second fermentation in the bottle, using the champenoise method. The wine is then aged for at least 3 years in the bottle, during which time the bottles undergo a manual remuage process to remove dead yeasts and give the wine the right amount of effervescence.
Tristan Hyest's Champagne La Cave non dose has a brilliant golden colour and a fine, persistent foam. On the nose, notes of yellow-fleshed fruit, citrus fruits, honey and sweet spices emerge. In the mouth, the wine is full, complex and balanced, with vibrant acidity and a long, mineral finish. The fact that this champagne is non-dosed means that the typical dose of sugar is not added before fermentation in the bottle, allowing the wine to fully express its personality and the terroir from which it comes.
Thanks to its complexity, elegance and freshness, it lends itself to pairing with sophisticated dishes such as fish, oysters and sushi.
