The Champagne Les Galipes de Coulommes by Jean Servagnat represents the excellence of the Montagne de Reims, fully expressing the characteristics of its Premier Cru terroir. This cuvée is a balanced blend of grapes: 68% Meunier, 22% Chardonnay, and 10% Pinot Noir, sourced from the parcels located in Coulommes la Montagne. The name "Galipe" comes from a local idiom meaning "vineyard," highlighting the close connection with the land.
The production of this Champagne follows traditional methods, with spontaneous fermentation followed by malolactic fermentation. The grapes used come partly from the 2018 harvest (about 60%) and partly from reserve wines (40%). After the tirage in April 2018, the wine was disgorged on July 25, 2022, with a dosage of 1.7 g/l.
Intense straw yellow with fine and persistent mousse. On the nose, Champagne Les Galipes de Coulommes offers a complex and refined bouquet. Aromas of white flowers, ripe lemons, kumquats with their peel, lemon cream, white-fleshed stone fruit, and jasmine are perceived. Notes of white nougat, warm pastries, and toasted nuts complete the aromatic profile, giving freshness and maturity.
