Champagne Npu 2004 Bruno Paillard
Champagne Npu 2004 is a fine Champagne produced by Bruno Paillard. This is a bottle of incredible value and complexity, produced in limited quantities only in the best vintages and from the best plots on the estate. It is made from a blend of equal parts Chardonnay and Pinot Noir from Grand Cru vineyards in the communes of Oger, Le Mesnil sur Oger, Chouilly, Verzenay, Mailly and Bouzy.
Bruno Paillard, one of the most prestigious companies in the Reims area, produces Champagne with great attention to environmental protection, limiting the use of chemicals as much as possible. The grapes used to make this Cuvée are pressed very gently, after which the must ferments in small oak barrels. Before the creation of the assemblage, the vins clairs mature in wood for 10 months. The second fermentation takes place in the bottle according to the Champenoise Method, with a minimum of 12 years' rest on the lees before dégorgement and a further 30 months' refinement in the bottle.
The 2004 "Nec Plus Ultra" Champagne shows a luminous and brilliant golden yellow colour in the glass, with a very fine and persistent perlage. The nose is broad and refined, with a bouquet of yellow fruit, candied peel, hawthorn flowers, notes of honey and pastry. It envelops the palate with a deep and balanced, creamy but with a hint of flavor, with a very long persistence. An incredible Champagne, which conquers for its elegance, depth and aromatic complexity.
