Champagne Polisy Reserve Andre Beaufort
Polisy Reserve is a fine Champagne produced by Beaufort. It is made from a blend of Pinot Noir and Chardonnay from the Aube area of the same name in the Côte des Bars. Fermentation takes place spontamentously with only indigenous yeasts and separately for the different plots in steel containers and wooden barrels.
The winery also ensures that malolactic fermentation takes place for its base wines in order to reduce the amount of sulphur dioxide. The wine then re-ferments in the bottle according to the Champenoise method to rest on the lees for 24 months. The Champagne Brut Reserve Polisy of Beaufort expresses a luminous straw yellow colour and a fine, numerous and persistent perlage.
The nose offers aromas of yellow fruit and wild herbs, with a background of butter and yeast. The taste is balanced between structure and creaminess and a nice dose of freshness and minerality, for a persistent finish.
