Chardonnay Yarra Valley 2019 Timo Mayer
The 2019 Yarra Valley Chardonnay is an Australian white wine produced by Timo Mayer, the founder of this small winery committed to a small range of wines made with sustainable methods and little intervention, convinced that the wines are made in the vineyard and not in the cellar.
The Chardonnay grapes come from 20-year-old vines grown in the Bloody Hill vineyard, a very steep six-acre plot on red, rocky volcanic soil. The vineyards are situated at an elevation of between 300 and 470 metres, in an average cool climate for Australia.
After the grapes are harvested by hand, the must is transferred to old barrels where spontaneous fermentation with indigenous yeasts takes place. The wine is then racked into stainless steel to age for four months before being bottled without filtration.
Timo Mayer's 2019 Yarra Valley Chardonnay is a fresh and mineral white, expressing flint aromas on the nose that give way to citrus and tropical fruits. The sip is full and structured, balanced by a nice dose of acidity.
