Chassagne-Montrachet 1er Cru Les Chaumées 2017 Caroline Morey
Caroline Morey's Chassagne-Montrachet 1er Cru Les Chaumées, from a vineyard planted in the 1950s on the northern border of Chassagne-Montrachet, is a wine of great distinction and extraordinary consistency. Made exclusively from Chardonnay grapes, this Premier Cru stands out for its palate breadth and enveloping minerality, with an intensely persistent finish.
The vinification of Les Chaumées is characterized by utmost care and respect for the natural development of the wine. The process involves minimal intervention, allowing the wine to evolve gradually. Bâtonnage is not practiced to preserve the delicate characteristics of the grape variety, avoiding premature oxidation.
Aging occurs in demi-muids without artificial temperature increase, allowing malolactic fermentation to occur naturally. Bottling, done without filtration, utilizes untreated cork and wax to ensure the best protection of the wine's natural qualities.
The result is a wine with a clear yellow color and green reflections, with a bouquet of floral, mineral, and buttery notes. On the palate, it reveals a linear structure, some softness, and a finish characterized by notes of white flowers. Thanks to its excellent structure, this Premier Cru can be aged in the cellar for about 10 years.
It is recommended to serve Chassagne-Montrachet 1er Cru Les Chaumées at a temperature of 13°C, pairing it with delicate dishes such as perch fillet, cod slice with leek cream, or hake fillet. Each sip of this extraordinary wine tells the story and passion of Caroline Morey, making it an authentic jewel of Burgundy to be enjoyed on special occasions.
