Chassagne Montrachet 2018 Vincent Dancer
Chassagne Montrachet 2018 is a fine Burgundy wine produced by Domaine Vincent Dancer. The 100% Chardonnay grapes come from Chassagne-Montrachet vineyards planted between 2000 and 2002, in the Côte de Beaune, on clay-limestone soils.
Dancer wines are made according to organic farming principles and represent authentic interpretations of the terroir of origin, bottles of the highest quality that satisfy even the most demanding palates.
Fermentation is spontaneous with indigenous yeasts, while battonage is not carried out to preserve freshness. It matures in around 20% to 30% new oak for 17 months and after blending is racked back into stainless steel to age for a further 5-6 months before bottling, which takes place without filtering or filtration.
This Chassagne Montrachet shows in the glass a beautiful straw yellow colour with golden reflections. The nose expresses a bouquet of ripe fruit and floral notes, for a sip consistent with the nose, rich and textural but at the same time fresh.
