The Châteauneuf-du-Pape 2021 from Domaine Mayard is a refined and complex wine, representing one of the most prestigious terroirs in the Rhône Valley. Made from a blend of Grenache (80%), Cinsault (10%), and Mourvèdre (10%), this wine embodies the essence of the Châteauneuf-du-Pape appellation.
The grapes come from three specific plots: Grand Coulet in Sorgues, la Crau in the heart of the appellation in Châteauneuf, and le Pointu in the Courthezon woods. Each plot contributes its unique characteristics: Grand Coulet with its rolled pebbles over red clay-sand, la Crau with Miocene sands and Pliocene clays, and le Pointu with Miocene sands. This mix of soils gives the wine exceptional complexity and depth.
The harvest is manual, with rigorous selection of grapes both in the vineyard and in the cellar. Fermentation is spontaneous, using indigenous yeasts, and lasts 4-5 weeks. After alcoholic fermentation, the wine is aged in concrete tanks for 18 months before bottling. This traditional winemaking process preserves the integrity and authenticity of the terroir.
