Chevalier Montrachet Grand Cru 2003 Bouchard Pere & Fils
Chevalier Montrachet Grand Cru is one of Burgundy's most prestigious white wines, produced by one of the region's historic wineries, Domaine Bouchard. The production of this wine requires a great deal of effort and attention, from the harvesting of the grapes to maturation in the bottle.
Vinification begins with the manual harvesting of the grapes, which takes place at precise periods to ensure maximum ripeness of the bunches. After careful selection, the bunches are gently pressed to extract only the finest must, which is left to ferment in French oak barrels. Fermentation takes place at low temperatures and can last up to several months, in order to ensure a slow and complete transformation of the sugars into alcohol.
After fermentation, the wine is left to mature for approximately 12-18 months in French oak barrels, where it acquires its characteristic bouquet of aromas and a well-defined structure. The wine is bottled without filtration to keep all its organoleptic characteristics intact.
Chevalier Montrachet Grand Cru is a white wine of great complexity and elegance, with a rich and intense aromatic profile. The nose reveals notes of yellow-fleshed fruit, such as peach, apple and pear, accompanied by hints of vanilla, butter and sweet spices. In the mouth, the wine is complex and well-structured, with a perfect harmony between the freshness of the acidity and the softness of the structure. The finish is long and persistent, with an aftertaste that again recalls the notes of fruit and spices.
