Côtes du Jura Chardonnay "Les Grandes Vignes" 2019 Eric Thill
This charming white wine is entirely produced from Chardonnay grapes harvested from two different parts of the Les Grandes Vignes vineyard, where Eric and Bérengère cultivate 1 hectare of Chardonnay.
The wine ferments naturally and matures in stainless steel tanks for 18 months. A clean and mineral Chardonnay with a long, very long persistence. A wonderful introduction to Jura whites for those eager to explore these extraordinary wines.
The vineyards extend over various types of soils, from Bajocien limestone to the famous grey, red, and blue marl. Although Eric and Bérengère's vineyards have always been cultivated organically, everything is harvested by hand, with minimal use of pesticides and sulfur. Thanks to the low yield per hectare, the wines are concentrated.
In viticulture and winemaking, Eric works alone. He practices parcel vinification, vinifying the fruit from each vineyard separately without blending varieties or adding purchased fruit. He seeks to express the unique characteristics of the terroir and each grape variety in his wines.
In the cellar, he uses only wild yeasts and low doses of sulfur at pressing (<3g/Hl). Gentle pressing and long cycles for the whites without significant skin maceration. For the reds, the length of maceration depends entirely on the season. Each cuvée is bottled only when deemed ready, from 6 to 18 months after the end of fermentation.
