Des Pieds et Des Mains Domaine du Mortier
Des Pieds et Des Mains from Domaine du Mortier is a Cabernet Franc micro-cuvée, produced with strict attention to ecological aspects by the Boisard brothers. The grapes come from 70-year-old vines located on gravelly soils, which gives the wine a unique structure and a great expression of terroir.
Fermentation takes place with whole clusters in wooden cuves for 25 days, during which the grapes are foot-pressed every evening for 5-10 minutes. This traditional method allows slow and gentle maceration, enhancing the complexity of the wine. Aging continues for 24 months in old oak barrels, used for three previous vinifications, to ensure harmonious evolution without bringing excessive wood notes.
Des Pieds et Des Mains is a powerful and complex wine, characterized by rich and fine tannins. On the nose, intense notes of spices are perceived accompanied by a “vegetal” freshness of great elegance. In the mouth, the structure is enveloping and persistent, with a depth that surprises and captivates, making it perfect for tasting evenings with friends and wine lovers.
