Champagne Dom Pérignon P2 Moët & Chandon
Dom Pérignon P2 by Moët & Chandon is a champagne that embodies the excellence of the Dom Perignon maison, belonging to the renowned Moët et Chandon. This maison is among the most celebrated in the world for the production of champagne.
The heart of this champagne is made up of the best Pinot Noir and Chardonnay grapes, grown in the Grand Crus of Champagne. These vineyards are located in the municipalities of Ay, Bouzy, Verzenay, Mailly and Hautvillers for Pinot Noir and in the municipalities of Cramant, Choully, Avize and Le Mesnil for Chardonnay. Dom Pérignon P2 is a vintage champagne, made with grapes and wines from a single vintage.
The peculiarity of the Dom Pérignon Vintages lies in their evolutionary process, divided into specific expressive phases called "Plénitudes". P2 represents the Deuxième Plénitude, obtained after 16 years of overall refinement. The harvest takes place in mid-September, when the grapes have reached maximum ripeness.
The processing of this champagne takes time, with a refinement of approximately 8 years in the bottle on its own yeasts, before disgorgement and the final dosage. The result is a wine with a bouquet that offers citrus and spicy fragrances, enriched by notes of white fruit and touches of vanilla, yeast and toast. In the mouth, it is fruity, ripe and fleshy, with extraordinary depth and balance.
