Fixin 2021 Domaine Lou Dumont-Nakada
Fixin 2021 is a Burgundy red wine produced by Domaine Lou Dumont-Nakada. It is made from 100% Pinot Noir grapes from 30 year old vines from the village of Fixin, produced with the utmost attention to each stage of production in search of the highest quality product, with minimal intervention in both the vineyard and the cellar. The must undergoes 3-5 days of cold maceration on the skins and ferments spontaneously for about 15 days. Subsequently, the wine spends 18 months in 50% new oak barrels and one month in stainless steel tanks before bottling.
This Fixin 2021 shows an intense ruby red colour in the glass, while the nose offers a wonderful bouquet of fruit and remarkable minerality. The sip is medium-bodied, soft but balanced by a nice acidity and sapidity.
